American Cliche - American Amber Ale - Tasting Results/Review

After several attempts at brewing Amber Ales that fell just a bit short of expectations, we set out to craft the quintessential version of the style. The target was something perfectly balanced, showcasing robust malt character alongside distinct American hop presence. Titled American Cliché, this batch also marked a major milestone for our setup: our very first venture into using liquid yeast. Despite a few fermentation quirks along the way, this turned out to be hands down the best Amber Ale we've brewed to date.

Recipe Overview & Rationale

The recipe rationale was simple: build a traditional, rich malt base using classic crystal and specialty roasted grains for depth, then layer iconic "C-hops" and Amarillo for classic citrus and pine notes.

The primary departure from design came during attenuation. The target final gravity was 1.011, but the fermentation finished up at around 1.017–1.018. Lower attenuation than expected meant a slightly lower ABV, but it left a pleasant residual body that actually complements the flavor profile nicely without feeling overly heavy.

Appearance

In the glass, the beer pours a deep, rich reddish-copper amber—spot on for the target 35 EBC color profile. It crowns with a dense, creamy, off-white head that lingers well throughout the pour, leaving clean lacing along the glass.

The clarity, however, remained somewhat hazy and murky. Given the grain bill and fining additions, this level of opacity was unexpected. It is likely attributable to the yeast behavior on its first liquid batch run or yeast remaining in suspension, though visually it still looks inviting in a craft-pub sort of way.

Aroma

The nose is generously fragrant and slightly malt-forward. Rich, toasted bread, caramel, and light biscuit notes lead the way, closely followed by a pleasant backdrop of grapefruit zest, floral pine, and subtle stone fruit courtesy of the Centennial, Cascade, and Amarillo dry-hopping. The hop character is present enough to let you know it’s distinctly American, but it respects the malt base.

Flavour

On the palate, this beer truly shines. The higher residual gravity (1.017–1.018) works in its favour, giving the beer a lush, silky mouthfeel and balanced sweetness.

  • Malt Profile: Toffee, toasted biscuit, and sweet caramel notes upfront, grounded by a tiny hint of cocoa/roast complexity from the Light Chocolate malt.
  • Hop Profile: Smooth, balanced bitterness from the Warrior boil addition. The flavor mid-palate delivers vibrant citrus zest, subtle orange oil, and resinous pine.
  • Finish: Cleans up surprisingly well without a lingering harsh bitterness, leaving a warm caramel-and-citrus aftertaste that begs for another sip.

Final Thoughts

Making the jump to liquid yeast with Mogwai's Golden State yeast was an absolute success. Even though attenuation landed lower than planned and left the beer a bit hazy, the flavor and mouthfeel more than made up for it. American Cliché hit all the right notes for what an American Amber Ale should be: balanced, flavorful, and easy-drinking. It’s officially our top amber ale recipe to date, and one we will definitely be refining and re-brewing in the near future!
